Rack of Lamb

Preheat oven to 450°. Move oven shelf to the center position.

Rub Rack all over with olive oil.

Season the rack all over with salt and pepper and any other spices of your choosing (i.e garlic or rosemary).

Roast the lamb in preheated oven (450°) for 10 minutes.  Then turn down oven to 300 for another 15 minutes. More time may be needed, however check internal temperature to see if necessary.

Take a reading in the center of the meat to check doneness. (see Note below)

Let it rest for 10 minutes, loosely covered, before carving between the ribs.

 

Bloody rare: 115°F to 125°F

Rare: 125°F to 130°F

Medium rare: 130°F to 135°F

Medium: 135°F to 140°F

 

Optional: Other herbs, spices and/or mustards may be added to this recipe to compliment the lamb.
